No disrespect to Annapolis, Maryland, longtime home base for our friends and partners at Ceremony Coffee, but when we heard they were expanding to Baltimore, we couldn’t help but get stoked. Baltimore’s coffee scene is shaking things up, as recently explored in this Baltimore city coffee guide by Sprudge staff writer Sara Billups. Ceremony’s new digs are going in to a “foodie paradise” food hall in Baltimore’s cool Mt. Vernon neighborhood. We can’t wait to check this place out.

For those who aren’t familiar, will you tell us about your company?

Ceremony is a dialed-in collective guiding a wholesale/retail roasting operation that focuses most of its time and energy on creating and supporting beautiful coffee experiences.

Can you tell us a bit about the new space?

We set out to build an incredibly accessible, educational coffee space, where a curious mind can explore, learn, and grow in their love of coffee alongside us.

The space is 3100 square feet total with a lot of natural light and a large patio in the front; in all, it’s part cafe, part pro shop, and part training center. It’s on the south side of the 520 Park Building, which is also home to the new Mt. Vernon Marketplace. In opening this relaxing, yet engaging space, we hope to add another gem to the cultural treasure that is the historic Mt. Vernon neighborhood.

What’s your approach to coffee?

We aim to provide a nuanced, yet relatable experience by meeting each customer at their level of comfort. This necessitates hiring empathic, hospitable baristas who curate and brew a coffee offering that spans the spectrum of flavors from deeper to brighter. We choose to highlight each coffee’s most beautiful flavors and aromas through relatively light roasting, but you won’t get lemony shots here. By prioritizing barista training, education, and support, we help to make sweet, full-bodied cups a part of every customer’s daily experience.

Any machines, coffees, or special equipment lined up?

A white Synesso 2-group MVP (first production model released!) + a white Synesso 2-group Cyncra, Nuova Simonelli Mythos, Mahlkoenig EK43s, 3 Modbar pour-over modules, and a FETCO CBS-2132xts up front. In the lab, we’re running a Modbar espresso + steam system, a Nuova Simonelli Mythos grinder, another Mahlkoenig EK43, another Fetco CBS2131xts, and a baller home kit for weekend warriors to practice on!

What’s your hopeful target opening date/month?

The first week of September!

Are you working with craftspeople, architects, and/or creatives that you’d like to mention?

A major feature of Baltimore-based SM + P Architects are two gorgeous blackened stainless steel floating service bars. Fabricated by local craftspeople Majer Metalworks, we’re super excited about these one-of-a-kind bars that were designed with the barista and customer in mind. Built around Douglas fir, the blackened stainless touches are truly a sight to behold.
