A good season of Build-Outs is like an artful dégustation, melding the new and exciting with an artful approach to the classics. We love showing you the first-ever cafes from brand new brands in this series, whether they’re in big cities or small towns (and these days it feels like the small towns are taking over). But there’s something equally satisfying about checking in with an established brand, getting ready to break ground on a new expression of their take on coffee culture.
Toronto’s Pilot Coffee Roasters will open their fifth cafe a little later this summer, stocking a state-of-the-art array of gear in a cafe inside one of Toronto’s most iconic skyscrapers. Toronto office workers never had it so good.

For those who aren’t familiar, will you tell us about your company?
Pilot Coffee Roasters is a roaster, retailer, and wholesaler based in Toronto. Established in 2009, we operate four of our own Toronto locations and have a wholesale base that spans the country.
Can you tell us a bit about the new space?
Pilot Coffee Roasters will open its fifth full-service retail location in First Canadian Place and will offer a range of espresso and coffee drinks using leading-edge equipment, such as La Marzocco.
There are plenty of cold drink options including a specially curated lineup of our nitro-infused cold brew as well as various kombucha on tap. And for your convenience, our Pilot Cold Brew will also be available by the can and four-pack.
To accompany your coffee, seasonal pastries, baked goods, and “grab and go” breakfast and lunch items will be delivered daily from our commissary kitchen. Also expect a selection of freshly roasted coffee beans, including our house blends and seasonally rotating single-origin offerings. Coffee-making accessories will also be available.
What’s your approach to coffee?
Behind each bag of Pilot Coffee Roasters beans is an intercontinental network of dedicated individuals and a lot of hard work. What drives us is our passion for great coffee. What guides us are our core commitments to quality, innovation, and exceptional service.
Any machines, coffees, special equipment lined up?
Our First Canadian Place location will be using top of the line espresso and brew equipment including a La Marzocco Linea PB 4 ABR, Mahlkönig Peak espresso grinders and an EK43, a Puqpress precision coffee tamper, a Marco Mix Font 3 Temp Boiler hot water dispenser, Marco Jet Single Brewers and Marco Jet FCG grinders for brew.
What’s your hopeful target opening date/month?
September 2017.
