The food and beverage scene in the Carolinas is booming, and so its no surprise that one of this season’s first Builds would hail from the city of Charlotte, North Carolina. In the fall of 2015 we ran this feature on the Charlotte coffee scene, and in the years since the city’s coffee scene has continued to grow. Today we’ll take a look at what much-loved local chain Not Just Coffee‘s got planned for their fourth location, opening in late-August/early-September in the historic Dillworth neighborhood. It seems like a good time to be a Charlottean.

For those who aren’t familiar, will you tell us about your company?
Not Just Coffee is a Counter Culture Coffee account focused on hospitality and serving kick ass coffee! We have been operating in Charlotte since 2011 and are working on opening our 4th cafe.
Can you tell us a bit about the new space?
Dilworth Crossing is a development in the historic neighborhood of Dilworth. It’s a building being constructed in the old mill style that Charlotte was known for and will feature several businesses, including a yoga studio, a wood fired pizza restaurant, a cold pressed juice bar, our cafe, and others. We plan on integrating some classic design elements as well as some modern touches that we love. We are also incorporating a new food menu and working with the ABC to bring a cocktail program on board. This would include classics as well as some house cocktails incorporating coffee!
What’s your approach to coffee?
I believe coffee should be approachable, fun and consistent. Our single origin offerings should highlight the tasting notes that are unique to those specific coffees and stand alone without any additions. If your preference is cream and sugar, enjoy it that way. Coffee should be consumed without worrying about whether it’s done the right way or not. Let us take care of that! We work hard to create delicious drinks with any flavorings made in house and our espresso dialed in.
Any machines, coffees, special equipment lined up?
We’ll be installing a two-group La Marzocco Linea PB, Mahlkönig EK-43 and K30 grinders, Nuova Simonelli Mythos One grinder, Curtis water tower, and a FETCO 2141 XTS batch brewer. We’ll also be getting a Kold Draft ice maker for our iced drinks and cocktail program which I’m really excited about!
What’s your hopeful target opening date/month?
Looking to open end of August/beginning of September.
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
Our architect/design build guy Hank Schellenger is drawing plans and doing our metal and woodworking for the new space. He’s incredibly talented with the look and feel of our brand. We’ve worked extensively with graphic designer Eric Hurtgen for menus, labels, window decals etc. He’s one of the best in the business and I can’t wait to see what he comes up with!
